Allergens

Food allergens must now be displayed by all food businesses selling unwrapped food or that wrapped for direct sale such as from deli's or bakeries.

There are 14 food allergens that businesses must be aware of including:
Eggs
Milk
Ground nuts i.e. peanuts
Tree nuts e.g. almonds, hazelnuts
Lupin
Sesame
Celery
Mustard
Sulphites
Soya
Gluten containing cereals

You must ensure that:
Staff have adequate allergy training - The Food Standards Agency provide an on-line course in food allergies http://allergytraining.food.gov.uk/english/
